Cover and marinate for 4-24 hours. Make the Tzatziki: In a bowl, mix all tzatziki ingredients. Chill until serving. Cook the Meat: Pan-fry: Saute in a hot non-stick pan or griddle with a dash of oil for 6-8 minutes, stirring often, until golden and cooked through. Grill: Use skewers or a grill pan over medium-high heat. Warm the Pita. Lightly toast or heat pitas in a dry pan or oven.
