Step by Step Guide

1. Add the suet and dumpling mix into a bowl and mix together until it forms what looks like breadcrumbs
2. Add the fruit, eggs and treacle then mix well
3. Soak the clootie (cloth) in water, lie it flat and cover generously with flour
4. Place the mixture in the middle of the cloot and tie the top with some string leaving a little room for expansion
5. Place a heatproof plate into a large deep saucepan, place the dumpling onto the plate then pour in enough boiling water to cover the dumpling, simmer for 2 hours ensuring that the dumpling is always covered with water
6. Remove the dumpling after 2 hours (careful its hot) and place in a pre heated oven at 180 degrees C, gas mark 4 for 10 minutes, this will help form the skin on the clootie dumpling
